½ cup semolina (suji)
¼ cup water (for soaking semolina)
1 tsp sugar
2 cups (200 gm) flour (maida)
1½ tsp baking powder, 1 tsp salt
½ cup water
filling (Mix together)
1 cup grated or mashed paneer (100 gm)
2 tbsp chopped coriander, 2 tsp chopped green chillies
½ chilli powder
¼ tsp salt
¼ tsp garam masala
method
Mix sui and sugar. Add ¼ cup water and mix well. Keep aside for 15 minutes. Sieve flour, salt and baking powder. Add suji mix and mix well. Add enough water to lightly gather the mixture into a soft dough. Do not knead. Apply some oil on the dough and cover with a moist cloth. Rest the dough for at least 20 minutes or more. Divide dough into 8 balls and cover them. Cover the tray of an electric tandoor with aluminium foil. Grease foil. Heat the tandoor. Take one ball, flatten with your hand. Keep the filling in the center and close it up as you do for stuffed paranthas. Roll it like a chappati using flour. Place kulche on the lined tray. Put the tray with kulcha back in the hot tandoor. Cook till light golden specks appear on the kulche. ......................Aternatively heat tawa on gas take rolled out kulcha in your hand apply little water on one side and place it on tawa keeping moist side down when the upper side of kucha starts rising remove it from tawa and put it on chapati net direct fire keeping upper side down and cook for 30 sec remove from fire apply butter and serve hot with any kind of gravy dish you like.
