500 gms tender snakegourd cut into 2” pieces and seeds removed and chopped separately.
1tbsp mustard oil
For stuffing:_
2 large onions chopped finely
½ tsp haldi (turmeric)
grinde together in stone grinder(kundi) 5-6cloves garlic,1/2tsp each dhania zeera and 2 red chilies
1/2 tsp garam masala
1 tsp amchoor powder
Salt
heat 1tbsp oil in a pan add garlic mixture when its brown add haldi amchoor salt and onion and removed seeds sauté for 2-3 min. till onions and seeds are tender add garam masala remove from fire keep aside on cooling.Stuff this stuffing into snake gourd pieces.In a thick bottomed pan add the remaining oil. Keep the stuffed snakegourds,. cover and cook on a very low heat, you need to be gentle to move them around, but be careful not to break any of the pieces. This may take 10-15 mins . serve with chapatti or paratha.
