ALOO KARELA(POTATO BITTER GUARD)
Bitter gourds or karela 6 to 8
Potatoes- 4 medium size
Onion one big size. Sliced length wise
Salt- to taste(extra for rubbing)
2 medium dry red chillies
Red chilli powder1/2 teaspoon
Coriander powder1 tablespoon
Amchur powder-1heaped teaspoon
Garam masala powder-1/2 teaspoon
Oil- 2 tablespoon (preferably mustard)
method
Wash peel potatoes, slice them lengthwise and keep them in a bowl filled with water.Scrape the outer skin of karela, slit them lengthwise , apply salt on them and leave them for ½ an hour.Wash karela, squeeze the excess water from them.Heat oil in a pan or kadhai,add whole red chillies when they turn brown add onion saute for one mimute add potatoes and karela,sprinkle some salt and turmeric powder over them, cover the lid and let them cook for another 4-5 minutes.Meanwhile in a bowl mix all the spices ( salt, turmeric powder, coriander powder, garam masala powder and amchur powder) add to the vegetable.cook on low heat till done keep steering in between.
Note : do not throw the peels of karela , they can be used to make prantha, or a anothER sabji of peels only with tomato amd onion
