MEETTHE CHAWAL...FAMOUS DESERT OF DHAAM FROM HIMACHAL


 One cup basmati /or any other rice
One ladle of ghee
1cup sugar
Rose water( optional)
3-4 whole black pepper
One bay leaf
2 pinches of orange food colour(optional)
Saffron can be used to add colour
Dry fruits for garnishing (you can use any of your choice)
Wash and soak rice in water for half an hour
Make sugar syrup by boiling sugar in ¾ cup of water add rose water and food colour it and keep aside. Now boil 4 cups of water add rice to it and cook till 80% done sieve it and drain the excess water , place in a bowl and mix half ghee to rice. In another pan heat rest of the ghee add bay leaf and black pepper to it sautes for 20 sec then add dry fruits saute again for 20 sec now add sugar syrup reduce the heat gently add rice mix 3-4 time so they are well coated with the syrup, place a lid on it and cook on low heat for 10 minutes……..
