Zimikand pickle

 


Zimikand pickle(elephant foot)

Zimikand 1kg

Mustard oil 300gms

Red chilli powder 2tsp

Haldi turmeric 1tsp

Heeng(asafoetida) 1/4 tap

Fennel seeds 1tsp

Fennel seeds powder 1tsp

Fenugreek seeds 1tsp

Fenugreek seeds powdered 1 tbsp

Sugar or gud jaggery 2-3 as per the sweetness you require tbsp I prefer gud

Citric acid 1-1/2tsp

Green chillies 100gms cut in halfs

Ginger & Garlic 50gms each crushed roughly

Salt to taste

Wash cut zimikand into bite size pieces

Heat oil let it reach smoking point then switch off the flame on cooling again put on medium flame, fry zimikand pieces till light golden brown . In the same oil add ginger garlic fry for a minute add  spices , chillies and mix fried zimikand switch off the flame let it cool, and keep in airtight jar. Oil should float over, in case ots less you can add more.
